Something New to Try: Kale!
If you haven’t tried kale – I highly recommend it! A serving of Kale (one cup) is extremely low in calories (about 30) – but has more than 100% of your daily needs for Vitamin A, C and K! It is also said to lower cholesterol and have cancer-preventing properties. High in antioxidants and fiber, this food is packed with good-for-you nutrition without many calories.
The only downfall to kale is that when raw, it’s bitter. This can be alleviated by mixing it into salad with other lettuce, or trying the following recipes. I typically saute it with cajun spices or mix it into my smoothies. Happy Eating!
